Xander isn’t usually allowed in the coldframes, but we were trying to see how much damage the voles had done. The answer? A lot! During this inspection he actually caught a vole…that’s never happened before. Rodents cause more losses in our nursery in the winter than cold temperatures. It can be discouraging.

Cran-Apple Crisp

I wish I could say all the ingredients in this came from my garden, but in truth none of them did.  In the fall I do make this dessert with apples from our tree. If you need something for a potluck, this is the perfect dessert: easy and delicious!

Cran-Apple Crisp Recipe

Preheat oven to 350 F.
Filling:
​4 cups chopped apples
2 cups cranberries
3/4 cup sugar
1/4 tsp. salt
1 1/2 tsp cinnamon
Topping:
3/4 cup brown sugar
1 cup oats
1/2 cup flour
6 T. butter​
Put apples, cranberries, sugar, salt, and cinnamon in a 9×13 baking dish. I always use a glass one, but that probably doesn’t matter. Mix everything together in the pan.  (I’ve used all kinds of apples for this, but if you are using a really sweet apple you might want to add 1 T. lemon juice or cut back on the sugar.)
Put all the topping ingredients in a food processor and pulse until uniformly crumbly. Sprinkle on top of the apples and cranberries.
Bake for one hour. 10-12 servings.
I meant to take a picture of it, fresh from the oven, but I forgot. Here it is a little later, most of it’s gone!
